Chocolate chip cookies are a universal favorite. And who doesn't love them fresh out of the oven? We've been getting a lot of requests on how to bake CBD chocolate chip cookies, so we're sharing this recipe with you. 

This CBD chocolate chip cookie recipe has been adapted from Detoxinista's Chocolate Chip Cookies. This recipe is not only Paleo but it's also vegan, making it suitable for a wide variety of diets. 

Ingredients

The most organized way to cook anything is to first get all your ingredients lined up, so let's start there. This recipe calls for:

  • 2 cups almond flour 
  • 1/4 teaspoon sea salt
  • 1/2 teaspoon baking soda
  • 2 teaspoons vanilla extract
  • 1/4 cup coconut oil, melted 
  • 1/4 cup pure maple syrup, at room temperature
  • 1/2 cup dark chocolate chips 
  • CBD oil of your choice

This recipe calls for two ingredients you might not be used to baking with: maple syrup and CBD oil. When baking with maple syrup, keep in mind that the darker the syrup, the more robust the flavor will be. And don't get confused by the "grades" of syrup, which are often labeled as "A" or "B." These terms refer to the darkness of the syrup and not the quality.

For the CBD oil, you can choose the concentration and flavor that is right for you. (We'll talk more about that in a bit.) If you feel like shaking things up, try some mint-flavored CBD oil. 

Directions
  1. The first thing you should do is mix your CBD oil with the melted coconut oil. 
  2. Next, whisk together the dry ingredients.
  3. Then add the wet ingredients until blended. 
  4. Last, gently stir in the chocolate chips.

Because this dough does not contain eggs, you can stop here if you'd like! Just get a spoon and dig in. However, if you have the willpower or just love a freshly baked cookie, these will need to bake at 350 F for 89 minutes. We recommend using a sheet lined with parchment paper so the cookies don't stick.

When placing the dough on the cookie sheet, drop by rounded tablespoons, which will give you about 15 cookies per batch. You will need to shape the cookies and keep the dough thin as they will not flatten like traditional chocolate chip cookies. 

The cookies are ready to take out of the oven when the edges are a light golden brown. If you like crispier cookies, leave them in a minute or two longer, but watch them closely so they don't burn.

How much CBD oil should I add to the cookie dough?

That's the million-dollar question.  As with all things CBD, there is no one answer. Everyone reacts differently to CBD, so you might have to do some experimenting and a little math. Things to consider are:

  • How much CBD do you want to take in a day? 
  • Will you be taking CBD in any other form, such as a gummy or capsule? 
  • How many cookies will you eat at a time? (Try to be realistic here!)
